Valentine’s day brings lots of love and sweet temptations! I need a yummy sweet treat that won’t wreck my healthy eating plan. Here’s a recipe that does just that!
4 cups of sliced strawberries, fresh or frozen
1 pkg. vanilla pudding mix-low fat
1 container of ultra low fat cool whip
If berries are frozen thaw them.
Puree the strawberries in a food processor. Isn’t my mini food processor cute? I got it as a Christmas present!
Add the dry pudding mix to the strawberries and mix well.
Then fold in the cool whip and continue until all is folded in.
I like to put mine in a pretty bowl and eat it with a little spoon so it lasts longer!
This is a good choice for a Valentine treat. A 1/2 cup serving has 98 calories, .2 grams of fat, 21 grams of carbohydrate and 1.3 grams of fiber. The whole recipe makes 8, 1/2 cup servings so you can share it with those you love!
