Ever get in a breakfast rut? I do. I just make the same thing every morning because it’s easy.
But this winter I’m breaking out of my breakfast rut! I found a new favorite breakfast.
Did you hate oatmeal when you were a kid? I bet you loaded it with brown sugar or maple syrup just to get it down? That’s what I did.
I found a new recipe for oatmeal that is nothing like the stuff I had growing up. It’s healthy and delicious too. No need for any extra sugar.
This recipe is sweet, full of fibre, nutrients and vitamins. It even has 10 % of our daily iron requirement. There is peanut butter in this recipe and that adds some great protein.
The fibre and the protein keep me satisfied for the whole morning. I don’t need a snack.
Here’s the recipe for Raspberry and Peanut Butter Oatmeal – my new favorite breakfast. It only takes about 5 minutes to make.
- 1/3 cup of oatmeal
- 2/3 cup of water
- ½ cup of frozen raspberries
- 1 tablespoon of natural peanut butter (no sugar added)
I like the old fashion oats best. The big flakes don’t get mushy when they are cooked.
In a cereal bowl add the oatmeal, water and raspberries.
Place in the microwave and cook for 2 minutes. I cook mine on level 7.
Remove from microwave and stir well. Then add the peanut butter and stir until well combined. Return to the microwave for another 2 minutes on level 7.
Remove from microwave and stir well. Let sit for 1 or 2 minutes to cool slightly.
This picture doesn’t do it justice – it’s a nice pink colour
This oatmeal is delicious and healthy too! It’s a nice comfort food on a cold morning.
Today’s little step: Try some oatmeal for breakfast! Your Mom was right! It’s good for you on these cold winter mornings. It can be healthy and delicious too!
